Key Ingredients
Russet Potatoes – or baker/Idaho potatoes are the perfect size and texture for these loaded baked potato slices
Bacon – smoky strips of bacon are baked until crispy, diced up and added on top the cheesy gooey potatoes. But that’s not all, we also reserve the bacon fat to add to the potato slices before they bake.
Cheese – sharp cheddar is shredded and piled high on top of the baked potato slices
Green Onions – slices of green onions add the perfect herby freshness without being too overpowering
Sour Cream – serve these loaded baked potato slices with a side of sour cream for dipping
Seasonings – in this recipe we simply use just salt, pepper and finishing salt
How to Make Loaded Baked Potato Slices
Step 1: Pre-heat oven to 400 degrees, lay out the bacon on a parchment lined baking sheet. Bake in the oven for 20 minutes or until crispy. While bacon is cooking, scrub potatoes clean and slice into 1/2 inch rounds. Set crispy bacon aside, using paper towels to remove excess grease from the bacon. Reserve 2 tablespoons of the bacon fat from the pan.
Step 2: Add potato rounds into a large bowl, add salt and pepper, pour in the bacon fat and toss potatoes well with coat evenly on all sides with seasonings and grease.
Step 3: Reduce oven to 375 degrees. Place potato slices directly onto the baking sheet 1″ apart. Bake in the oven for 20 minutes.
Step 4: While potato slices are baking, shred 1 block of cheese, slice up the green onions and dice the bacon.
Step 5: Remove potatoes from the oven, reduce heat to 350 degrees. Top each potato slice with 1 tablespoon of cheese followed by a big pinch of bacon. Bake for 8-10 minutes or until the cheese is fully melted.
Step 6: Remove potatoes from the oven and add sliced green onions and a sprinkle of finishing salt. Serve with sour cream or ranch for dipping.

Ingredients
- 4 large Russet potatoes

- 3/4 teaspoon salt
